Recipe Ingredients for cary's veggi omlette or frittata

5 egg whites
2 eggs
2 tablespoons olive oil
1 tablespoon feta cheese
1 zucchini
1 small tomato
1/2 onion
1/2 cup cooked spinach
1/2 cup broccoli

Recipe Directions for cary's veggi omlette or frittata

  1. saute onions in oil, then add vegetable in order zuchinni, brocoli, ominach, tomatoes....undercook...set aside then whip egg whites to stiffen, fold in yolks, pour in Pam covered pan, over medium burner until omlette skin fully formed, add veggies (cover with cheese if desired), then place in 350 degree oven for 5 to 10 minutes unitl top of omlette is stiff,

  2. remove from oven and serve
