Makes 36 mini-muffins, only 46 calories each Extremely moist

Recipe Ingredients for Caryn's Pumpkin Muffins

1 c canned pumpkin
3 eggs
3 t oil
1/3 c oatmeal
1 c wheat flour
3/4 t salt
3 t baking powder
1 T cinnamon
3/4 c shredded carrots
2 T flaxseed meal
1/2 t vanilla
1 T honey
1/2 c dried cranberries
1/8 t pumpkin pie spice
1/4 c sugar
1 c skim milk
1 1/2 c bran flakes

Recipe Directions for Caryn's Pumpkin Muffins

  1. Put all ingredients in mixer and mix thoroughly

  2. Let sit for about 15 minutes, for bran flakes to moisten

  3. Fill mini-muffin cups 2/3 full

  4. Bake @ 325 10 minutes
