A healthy, yummy way to start the day

Recipe Ingredients for Carrots & Spice Bran Muffins

2 cups whole bran cereal, crushed
306 g milk
1/3 cup apple sauce
2 eggs, beaten
1 1/2 cups finely shredded carrot
40 g coconut
1/2 cup raisins
1 cup all-purpose flour
300 g brown sugar, packed
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoons ground cinnamon
1/2 teaspoon salt

Recipe Directions for Carrots & Spice Bran Muffins

  1. In a large mixing bowl combine cereal, milk, applesauce, and eggs.

  2. Let stand 10 minutes.

  3. Stir in carrot, coconut, and raisins

  4. In another bowl combine flour, brown sugar, baking powder, baking soda, cinnamon, and salt.

  5. Add cereal mixture to flour mixture

  6. Stir just until combined

  7. Line muffin cups with paper bake cups

  8. Fill each 2/3 full

  9. Bake in a 375 degree F oven for 15 to 20 minutes or until toothpick inserted near center comes out clean. Serve warm

  10. Makes 18 muffins.

  11. Make Ahead Tip:Cool muffins completely. Wrap in foil and place in freezer plastic bag or store in airtight freezer container. Freeze up to 1 month.

  12. To reheat, wrap muffins in foil; bake in 300 degree F oven for 15 minutes or until warm.
