Recipe Ingredients for Carrots, Roman Style

1/2 pound carrots
2 tablespoons chopped mint leaves
2 teaspoons olive oil
1/2 teaspoon cumin seeds
2 1/2 cups water
1 tablespoon white wine vinegar

Recipe Directions for Carrots, Roman Style

  1. Slice carrots into pieces 2-3 inches long. Cut each piece lengthwise.

  2. Warm the oil with the cumin seeds and mint. add the carrots and toss. Add a few pinches of salt, water, vinegar, and bring to a boil. lower heat, simmer until tender, about 40 minutes. Season with pepper.
