Mini bite sized whole wheat muffins are a great veggie packed snack! Add banana, or nuts to customize.

Recipe Ingredients for Carrot Zucchini Whole Wheat Mini Muffins

2 c whole wheat flour
1 c brown sugar
1 c butter
1 c shredded carrot
1 1/2 c shredded zucchini
2 t baking soda
1 1/2 t cinnamon
1/2 t salt
1 t vanilla
3 eggs(beaten)
1 c 2% milk

Recipe Directions for Carrot Zucchini Whole Wheat Mini Muffins

Combine eggs, milk, brown sugar, vanilla and butter. Sift together flour, cinnamon, baking soda, and salt. Add dry mixture to wet, mixing together well. Fold in carrot and zucchini. Spoon into mini muffin cups, bake for 12-14mins at 375.
