From Diabetes Forecast December 2006 NOTE: I added some apple juice to make it more batter than bread dough, not included in analysis. NOTE 2: Original recipe called for 1 egg and 2 egg whites, but I used 3 whole eggs NOTE 3: DO NOT USE PAPER LINERS - muffins will totally stick!

Recipe Ingredients for Carrot and Zucchini Muffins

1 1/2 cups flour
2 tbsp. brown sugar
2 teaspoons baking powder
1 teaspoon cinnamon
1 teaspoon vanilla extract
3 eggs
1/2 cup carrots, shredded finely
1/2 cup zucchini, shredded finely
2/3 cup plain nonfat yogurt
2 teaspoons grated lemon zest
1/4 cup walnuts, toasted and chopped

Recipe Directions for Carrot and Zucchini Muffins

  1. Preheat oven to 400 degrees. Coat a 12-cup muffin tin with cooking spray

  2. In large bowl, combine dry ingredients except nuts.

  3. In medium bowl, combine wet ingredients, beat well.

  4. Add wet to dry ingredients and add nuts, beat until combined.

  5. Fill muffin cups two-thirds full with batter. Bake 15-17 minutes until tester comes out clean and muffins are lightly browned. Remove muffins from pan and cool.
