- Preheat oven to 350 - Grease 2 8x4 inch loaf pans, sprinkle with flour - Combine applesauce, carrots, zucchini, sugar, eggs, cinnamon, nutmeg and pumpkin pie spice - In a separate bowl, combine flour, baking powder, baking soda and salt. Stir in orange juice and then add the mixture from the first bowl. - Pour into bread pans and bake for 45 minutes or until a toothpick inserted into the center of a loaf comes out dry. - Allow to cool 15 minutes before removing from the pans.

3 cups whole wheat flour
1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon baking soda
1 1/2 teaspoons pumpkin pie spice
1 teaspoon ground cinnamon

1 cup unsweetened applesauce
3/4 cup shredded carrots
3/4 cup shredded zucchini
3/4 cup orange juice
2 large eggs
