Great tasting bread that can be made into muffins. My 1 year old LOVES these as muffins!!

Recipe Ingredients for Carrot and Zucchini Bread

2 1/2 cups whole wheat flour
1/2 cup wheat germ
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3 large eggs
1 cup sugar
1 cup shredded zucchini
1 cup shredded carrot
1/2 cup packed brown sugar
1/4 cup canola oil
1/4 cup applesauce
1 teaspoon cinnamon
1/4 teaspoon cloves
1/4 teaspoon nutmeg

Recipe Directions for Carrot and Zucchini Bread

  1. Mix together dry ingredients.

  2. In seperate bowl combine wet ingredients and mix well. Add all at once to dry ingredients. Mix until just moist. Pour into loaf pans or muffin tins sprayed with Pam.

  3. Bake at 350 for 45-55 minutes. If making muffins they will take much less time.
