Moist, not-too-sweet muffins are great for breakfast.

Recipe Ingredients for Carrot, Zucchini & Apple Muffins

2 cups carrots, shredded (10 oz baby carrots, about 25-30)
1 cup zucchini, shredded (1 med, about 6 oz)
1 apple, peeled, cored, finely chopped (1 large about 6-7 oz makes 1.75 cups chopped apple)
1 cup coconut meat, dried, shredded, sweetened
1 cup pecans, chopped (4 oz whole)
2 cups all-purpose flour
1 cup sugar
1 tbsp cinnamon
2 tsp baking soda
1 tsp vanilla extract
1 1/2 tsp grated orange peel (zest of one orange)
1/2 tsp salt
3 large eggs
1/2 cup canola oil
1/2 cup applesauce, unsweetened

Recipe Directions for Carrot, Zucchini & Apple Muffins

Preheat oven to 375 degrees or 350 degrees convection. Grease 1/2 cup muffin tins (two trays). Mix all ingredients except eggs in oil in large bowl. Whisk eggs and oil and fold into muffin mixture. Spoon 1/4 cup batter into each muffin cup. Bake for 20-25 minutes.
