Recipe Ingredients for Carrot & Walnut Tofu Neatballs

250 g tofu
3 large carrots
50 g walnuts
1 tbsp olive oil
1 tsp lemon juice
1 onion
2 cloves garlic
1 tsp fresh sage, chopped
1 tsp fresh rosemary, chopped
1 salt
1 pepper

Recipe Directions for Carrot & Walnut Tofu Neatballs

  1. Saute the garlic, onion and carrots in the olive oil until soft.

  2. In a food processor, blitz the walnuts until they are roughly ground.

  3. Add the firm tofu, herbs, lemon juice, salt, pepper and sauteed veggies (for more texture, reserve some of the veggies and mix in by hand at the end). Blend until everything is about the size of breadcrumbs. Check the taste and add more salt, pepper or herbs if desired.

  4. Form the mixture into balls: the size is up to you - I prefer mine a bit smaller than golf-ball sized, which makes about 12 balls. Place balls on a well oiled cookie sheet or roasting pan.

  5. Bake at 350F/180C for about 15 minutes. Rotate the balls and return to the oven for another 15 minutes.

  6. Serve with pasta or on a sub with tomato sauce and your favourite accoutrements.
