Recipe Ingredients for Carrot Veggie Burgers

3/4 cup diced carrots
1 cup cereal
1 eggs
2 tablespoons finely chopped celery
1 teaspoons finely chopped onion
1/4 teaspoon salt
1/8 teaspoon sugar
1/8 teaspoon pepper
1 tablespoon vegetable oil

Recipe Directions for Carrot Veggie Burgers

  1. Place carrots in a saucepan with a small amount of water. Bring to a boil; reduce heat. Cover and cook for 5 minutes or until tender; drain.

  2. In a bowl, combine carrots, cornflakes, eggs, celery, onion, salt, sugar and pepper; mix well.

  3. Form into three patties.

  4. Heat oil in a skillet over medium heat; cook patties for 3 minutes on each side or until browned. Serve on buns if desired.
