Recipe Ingredients for Carrot Sweet Potato and Ginger Soup

212 grams onion
237 grams carrots
153 grams sweet potato
10 grams stock cube
30 fl oz water
5 fl oz skim milk
1 teaspoon ginger powder

Recipe Directions for Carrot Sweet Potato and Ginger Soup

  1. Peel and dice all vegetables

  2. Place in a pan with powdered ginger, vegetable stock cube and water, bring to the boil and simmer for 15 to 20 minutes until all hte vegetables are soft.

  3. Liquidise, return to the pan and heat gently while adding the skim milk

  4. If soup is too thick add more water

  5. Heat through and serve.
