Healthy soup full of beta-carotene and a good source of Vitamin A and C.

Recipe Ingredients for Carrot, sweet potato and ginger soup

500 g carrots, peeled and chopped
2 medium onions, chopped
3 garlic cloves, crushed
300 g sweet potato, peeled and chopped
1/4 tsp ground cumin
20 g fresh ginger, peeled and sliced
900 g vegetable stock
2 tbsp olive oil
1 tbsp fresh thyme, chopped
1 pinch salt
1 pinch pepper

Recipe Directions for Carrot, sweet potato and ginger soup

  1. Heat the olive oil in a large saucepan and gently fry the onion until soft not browned.

  2. Add the garlic, cumin and ginger and cook for a further 30 seconds.

  3. Next add the carrots, sweet potato and vegetable stock. Bring to a steady simmer and cook until the carrots are tender and blend until smooth.

  4. Stir in the fresh thyme, season with salt and pepper and serve.
