Recipe Ingredients for Carrot Spice Muffins

1 1/2 cups whole wheat flour
56 grams instant oatmeal original flavor
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1/2 tsp ground nutmeg
1 cup shredded carrot
1/2 cup light brown sugar, unpacked
1/2 cup Splenda
1/2 cup unsweetened applesauce
2 eggs
1/3 cup plain lowfat yogurt
1/2 cup milk
1/2 cup raisins, soaked
1/2 tsp vanilla extract
1/4 cup chopped walnuts
1/4 cup chopped pecans

Recipe Directions for Carrot Spice Muffins

  1. Preheat oven to 350 degrees.

  2. Spray cups of muffin tin with cooking spray (preferrably butter-flavored).

  3. Stir together flour, oatmeal, baking soda, baking powder, and spices in a mixing bowl.

  4. In a large mixing bowl, beat eggs, using a hand mixer, standing mixer, or by hand.

  5. Beat sugar and Splenda into eggs, adding a little at a time.

  6. Beat in the applesauce, vanilla extract, and yogurt.

  7. Once liquid ingredients are thoroughly mixed, add teh carrots, then beat in the dry ingredients, adding a little at a time.

  8. Add in the milk a little at a time and blend into mixture.

  9. When batter is thoroughly mixed, stir in the walnuts, pecans, and raisins.

  10. Ladle batter into prepared muffin tin. Fill each cup to the rim to achieve the "puffy muffin top."

  11. Place muffin tin in middle of the oven and bake for 30 to 35 minutes.

  12. Remove from oven - allow muffins to cool for one minute, then slide a butter knife around each muffin, separating it from the tin.

  13. Turn the muffins out onto wax paper and set upright.

  14. Allow to cool slightly, then serve!
