Recipe Ingredients for Carrot Spice Muffins

3/4 cup flour
3/4 cup bran
2 tbsp. wheat germ
1/4 cup brown sugar, packed
1 tsp. baking soda
1/4 tsp. salt
1/2 tsp. cinnamon
1/8 tsp. nutmeg
1 egg
2 tbsp. canola oil
2 tbsp. molasses
3/4 cup skim milk
1 tbsp. vinegar
1/2 cup grated carrot
1/4 cup pecans, chopped
1/2 cup dates, chopped
1 tsp. PAM

Recipe Directions for Carrot Spice Muffins

  1. Preheat oven to 400 F (200 C).

  2. Combine dry ingredients in a large bowl. Make a well in the centre.

  3. Beat egg in a separate bowl. Add remaining ingredients and stir to mix.

  4. Pour liquid ingredients into dry ingredients and mix until just combined.

  5. Transfer batter into muffin tin sprayed lightly with cooking spray.

  6. Bake for 20 to 25 minutes.
