1/2 lb. baby carrots = 1-1/2 cups shredded 1/2 cup brown sugar = 1/2 cup white sugar, plus 1/8 cup molasses

Recipe Ingredients for Carrot and Spice Bran Muffins

2 cups All-Bran cereal
1 1/4 cups milk
1/3 cups oil
2 eggs
1 1/2 cups carrot, shredded
1/2 cups coconut
1/2 cups raisins
1 1/4 cups whole wheat flour
1/2 cups brown sugar
1/4 cups sugar
2 teaspoons baking powder
1 teaspoon Baking soda
1 teaspoon cinnamon
1 teaspoon ginger
1/2 teaspoon salt

Recipe Directions for Carrot and Spice Bran Muffins

  1. Combine cereal, milk, oil and eggs. Let stand 10 min. Add carrot, coconut & raisins.

  2. In another bowl mix flour, sugars, baking powder, soda and spices. Add cereal mixture. Stir until just combined. Grease muffin cups, fill 2/3 full.

  3. Bake 375° 24 min.
