1/2 onion, chopped 3 carrots, thinly sliced 1 cup water or vegetable stock 1 cup soymilk 1 teaspoon lemon juice 1 teaspoon balsamic vinegar 1/4 teaspoon salt 1/8 teaspoon freshly ground black pepper

0.5 medium (2-1/2" dia) Onions
3 medium Carrots
1 serving Soymilk Light Original Organic (Great Value)
0.5 tbsp Lemon Juice, Canned Or Bottled
0.5 serving VIGO BALSAMIC VINEGAR
1/4 tsp Sea Salt
0.13 tsp Pepper, Black

Recipe Directions for Carrot Soup - vegan

Place onion and carrots into a pot with water or stock and simmer, covered, over medium heat until the carrots can be easily pierced with a fork, about 20 minutes. Blend the carrot mixture along with the bell peppers in a blender or food processor in several small batches. Add some of the soymilk to each batch to facilitate blending. Return to the pot and add lemon juice, vinegar, salt, and black pepper. Heat until steamy.
