The original receipe called for a quarter pound of butter and 3 lbs of carrots instead we used 2 Tbsp of Margarine & 2 Tbsp of Olive oil & added 2 more pounds of carrots

5 lbs carrots (chopped)
6 cups chicken broth (98% fat free)
3 cloves of garlic
2 tbsp dried dill weed
1 1/2 tsp salt
1 tbsp Margarine
2 tbsp Olive Oil

  1. 1. In a medium sized stock pot, over hight heat, combine the chicken stock, carrots, garlic, dill weed, salt, Margarine & Olive oil. Bring to a boil, reduce heat and simmer for 30 minutes or until carrots are soft.

  2. 2. in a blender, puree the soup, return the stock pot and simmer for an additional 30 to 45 minutes. Season with additional dill or garlic if desired.
