Recipe Ingredients for carrot soup

450 g carrot, chopped
1 tbsp olive oil
1 large onion, roughly chopped
3 cups chicken stock
1/2 cup orange juice
1 tsp dried rosemary
1 tsp ground ginger

Recipe Directions for carrot soup

  1. cook carrot and onion in olive oil until onion has softened

  2. add stock, bring to the boil, then simmer gently until carrots are cooked.

  3. remove from the heat and liquidize

  4. return to the pan, add remaining ingredients and heat till piping hot. can also be cooled and frozen.
