A delicious and hearty soup that can easily be made vegetarian by using vegetable broth.

Recipe Ingredients for Carrot Soup

16 oz Carrots
2 1tsp Olive Oil
3 oz Lentils
5 cup Chicken Stock
1/4 tsp Sea Salt
1 tsp Spices Ground Coriander

Recipe Directions for Carrot Soup

Peel and slice carrots into rounds. Dice the onion and saute the carrots and onions in olive oil until soft. Add the chicken broth, lentils and coriander. Bring to a boil. Lower the heat and simmer for 30 minutes or until lentils are tender. Blend the soup in a blender until smooth.
