Carrot Soup NOTE: This recipe needs something in the way of spices. Maybe nutmeg, allspice and/or cinnamon.

Recipe Ingredients for Carrot Soup

1 1/2 cups onions, chopped
1/8 cup (6 tsp) garlic, chopped/minced
12 cups (3 quarts) water
4 lbs carrots, peeled and chopped
6 tsp Salt
1 T cinnamon
1 T allspice
1/2 T nutmeg

Recipe Directions for Carrot Soup

  1. Cut the carrots into small pieces.

  2. Add carrots, water, salt, chopped onions and garlic to slow cooker.

  3. Cook on high for an hour or two. Reduce heat to low and cook for 12 hours.

  4. Puree with immersion blender until smooth.

  5. Makes approximately 22 one cup servings.
