Recipe Ingredients for Carrot Soup

2 T Olive Oil
1 small Onion
5 cloves Garlic
1 lb Carrots
2 c Low Sodium Chicken Stock
3 T nonfat Yogurt
1/2 c Nonfat Milk

Recipe Directions for Carrot Soup

  1. saute onions, garlic and carrots in oil 10 minutes

  2. add chicken stock, bring to a boil and simmer 20 minutes

  3. cool and add yogurt and milk

  4. Add salt and pepper to taste

  5. add to blender and blend until smooth

  6. serve cold or hot
