Creamy carrot soup using rice rather than cream.

Recipe Ingredients for Carrot Soup

1 pound carrots
1 medium onion
1 clove garlic
4 cups chicken broth
1 cup water
1 cup dry white rice
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon white pepper
1/8 teaspoon red pepper
1/4 teaspoon ground thyme

Recipe Directions for Carrot Soup

  1. heat olive oil in large sauce pan

  2. add onion cook for 3 minutes

  3. add garlic cook for 30 seconds

  4. add carrots cook for 3 minutes

  5. add chicken broth, water, rice and spices

  6. cook for 20 minutes until carrots are soft and rice is cooked

  7. use immersion blender or food processor to puree the soup
