Recipe Ingredients for Carrot Soup

2 pounds chopped carrots
4 cups vegetable broth
1 medium potato, chopped
4 tablespoons butter
1 cup chopped onion
2 cloves garlic
1/3 cup chopped cashews

Recipe Directions for Carrot Soup

  1. boil carrots and potato

  2. saute onion, garlic and nuts

  3. add seasonings (ginger, black pepper, etc.) to onion mixture

  4. once cooked, combine all ingredients and blend
