Vegetarian soup. Can use pumpkin or squash in place of carrots.

Recipe Ingredients for Carrot Soup

7 carrots
1 onion
1 potato
1 1/2 quarts vegetable broth
2 tbsp vegetable oil

Recipe Directions for Carrot Soup

Saute onions in oil. Add carrots and saute for 10 min. til soft. Add broth. Simmer 25 min. Add cubed potato. Puree with blender.
