Creamy carrot soup with very few ingredients. Low calorie and filling.

Recipe Ingredients for Carrot Soup with Potatoes

8 large carrots
4 potatoes
2 stalks celery
8 cups water
1 teaspoon salt

Recipe Directions for Carrot Soup with Potatoes

Chop carrots, celery and onion. Put all ingredients in a 4 quart pot with a cover. Bring to a boil, then turn it down and simmer for 1 hour or more. Use an immersion blender and puree in the pot.
