Recipe Ingredients for Carrot Soup with lime and ginger

1 leek, chopped
350 g carrots, sliced
1 tbsp margarine
750 ml vegetable broth
1 tbsp lime juice
1 tbsp ginger
1 salt
1 pepper

Recipe Directions for Carrot Soup with lime and ginger

  1. Fry chopped leek and sliced carrots with margarine in a sauce pan.

  2. Add vegetable broth and simmer for 20 minutes.

  3. Cool down for 15 minutes.

  4. Pureť in a food processor.

  5. Put on heat again and simmer for 5 minutes.

  6. Add ginger and lime.

  7. Season to taste and serve.
