Piccadilly Cafeteria serves a carrot souffle, not sure about the recipe, but I would think they are similar

Recipe Ingredients for Carrot Souffle

7 cups chopped carrot (about 2 lbs)
2/3 cup granulated sugar
1/4 cup fat-free sour cream
3 tbsp all-purpose flour
2 tbsp butter, melted
1 tsp baking powder
1 tsp vanilla extract
1/4 tsp salt
3 large eggs, lightly beaten
1 cooking spray
1 tsp powdered sugar

Recipe Directions for Carrot Souffle

  1. Preheat oven to 350 degrees F.

  2. Cook carrots in boiling water 15 minutes or until very tender; drain.

  3. Place carrot in a food processor; process until smooth.

  4. Add granulated sugar and next 7 ingredients (granulated sugar through eggs); pulse to combine.

  5. Spoon mixture into a 2-quart baking dish coated with cooking spray.

  6. Bake at 350 degrees F for 40 minutes or until puffed and set.

  7. Sprinkle with powdered sugar.
