Recipe Ingredients for CARROT SOUFFLE

2 lbs carrots, sliced
1/2 cup sugar, brown
2 egg whites, large
3 eggs, large
2 tbsp flour, ap
1 1/2 teasp baking powder
1/2 teasp salt
3 tablespoons butter, softened
1 teasp vanilla extract

Recipe Directions for CARROT SOUFFLE

  1. PREHEAT OVEN TO 350 DEGREES F

  2. COOK CARROTS IN A SMALL AMOUNT OF WATER OR IN MICROWAVE UNTIL VERY SOFT(FALLING APART) AND THEN DRAIN WELL AND COOL

  3. IN A LARGE BOWL MIX TOGETHER SUGAR, EGG WHITES AND EGG

  4. MIX IN CARROT MIXTURE, BLENDING WELL

  5. ADD BAKING POWDER TO FLOUR AND ADD TO MIXTURE

  6. ADD MARGARINE AND VANILLA AND MIX ALL COMPLETELY

  7. TRANSFER TO OBLONG BAKING DISH COATED WITH NONSTICK COOKING SPRAY

  8. BAKE FOR ONE HOUR OR UNTIL EDGES ARE BROWN AND BEGINNING TO PULL AWAY
