Recipe Ingredients for Carrot Souffle

1 pound carrots
3 large eggs
1/2 cup sugar
1/2 cup butter
3 tablespoons all purpose flour
1 tsp baking powder
1 tsp vanilla extract

Recipe Directions for Carrot Souffle

Boil carrots until tender. Drain off water. Process carrots and remaining ingredients in a blender. Spoon into a 1 qt dish. Bake at 350 degrees for 45 minutes.
