Recipe Ingredients for Carrot Souffle

2 pounds carrots
2/3 cup splenda
1/4 cup sour cream, fat free
3 tbs whole wheat flour
2 tbs butter, unsalted
1 tsp baking powder
1 tsp vanilla
3/4 cup egg substitute

Recipe Directions for Carrot Souffle

  1. Preheat oven to 350

  2. cook carrots in boiling water 15 minutes

  3. place carrot in a food processor, process until smooth

  4. add rest of the ingredients

  5. spoon mixture into a 2 quart baking dish coated with cooking spray

  6. Bake 40 minutes
