This makes a wonderful side for Thanksgiving dinner.

Recipe Ingredients for Carrot Souffle

3 lbs carrots, peeled and sliced
1 cups margarine
6 large eggs
1/2 cup all-purpose flour
1 tablespoon baking powder
3 cups Splenda
1/4 teaspoon cinnamon

Recipe Directions for Carrot Souffle

  1. Preheat oven to 350.

  2. Cook carrots in boiling water for 15 minutes or until tender. Drain.

  3. Using a food processor, position knife blade and add all ingredients. Process until smooth, stopping once or twice to scrape down the sides.

  4. Spoon mixture into two (2) lightly-greased 1-1/2 quart soufflé or baking dishes.

  5. Bake for 1 hour, or until set and lightly browned. Serve immediately.
