This is a low fat version of the original recipe. I cut the butter in half and replaced with apple sauce.

Recipe Ingredients for Carrot Souffle

3/4 lb carrots
1/4 cup honey
3/4 tsp baking powder
3/4 tsp vanilla
1 T spelt flour
2 eggs
1/8 c butter
1/8 c apple sauce

Recipe Directions for Carrot Souffle

  1. Peel and shred carrots.

  2. Mix all ingredients and place in 1QT glass dish.

  3. Bake at 350 for 1hr.
