Makes 8 servings



Tomato soup may be used instead of tomato sauce. If you use Tomato Sauce, adding 2 T of sour cream may thicken and add a creamy flavor. Tastes even better if made in advance and chilled. Try without the oil. I don't think it needs it. A serving is only 30 calories if the oil is omitted.

Recipe Ingredients for Carrot Salad

3 cups carrots, sliced
1/2 cup onions, diced
1/2 cup green pepper, diced
8 oz tomato sauce, salt free
1 t worchestershire sauce
1 t pepper
1/2 t dill weed
1/2 cup vinegar, sweet
2 T canola oil

Recipe Directions for Carrot Salad

  1. 1. Par boil the sliced carrots until al dente; drain with cold water until cold.

  2. 2. Dice onions and green peppers

  3. 3. Mix dressing ingredients together

  4. 4. Toss all and chill.
