Recipe Ingredients for Carrot Rice Soup

3 oz bacon, diced (3 slices)
1/2 small onion, minced
1/4 cup white rice
3 1/4 cups chicken broth
2 cups sliced carrots
1/4 teaspoon sugar
1 pinch nutmeg
1/4 cup whipping cream

Recipe Directions for Carrot Rice Soup

  1. Cook bacon in large saucepan until crisp.

  2. Remove with slotted spoon and drain.

  3. Add onion to bacon drippings and sauté until softening.

  4. Add rice and stir to coat.

  5. Add broth, carrots, sugar, and nutmeg and bring to boil. Lower heat, cover, and simmer 20 min.

  6. Puree in blender and return to pot.

  7. Stir in cream and season to taste.

  8. Ladle into bowls and sprinkle with bacon bits.
