Carrot Rice Recipe

Makes 4 servings



Fragrant jasmine (or basmati) rice sauteed with carrots, onions, peanuts. Surprisingly delicious.

Recipe Ingredients for Carrot Rice

1 cup Jasmine rice
2 1/2 cups water
1/4 cup roasted peanuts
1 tablespoon margarine
1 onion, sliced
1 tsp. ginger root, minced (optional)
1 cup carrots, grated
1 salt, to taste
1 cayenne pepper, to taste

Recipe Directions for Carrot Rice

  1. Combine rice and water in a medium saucepan. Bring to a boil over high heat and reduce to low, cover, and allow to steam until tender (about 35 minutes)

  2. While rice is cooking, pulverize peanuts in blender and set aside. Melt margarine in a large skillet over medium high heat. Saute onions until golden brown then stir in carrots, ginger and salt to taste. Reduce heat to low and cover to steam 5 minutes. Stir in cayenne pepper and peanuts. When rice is done add it to skillet and stir gently to combine with other ingredients.

  3. Even better the second day.
