Traditionally known as Gajrella. This is a traditional pakistani/indian dessert.

Recipe Ingredients for Carrot Rice Pudding (Gajrella)

4 1/4 cups whole milk
1/2 cup sugar
1 lb CARROTS, finely grated
1/2 cup basmati rice

Recipe Directions for Carrot Rice Pudding (Gajrella)

  1. In a pot add the milk and put and bring to a boil over low heat. Add the rice and cook until milk starts to thicken and the rice becomes very soft. Add the carrots and sugar and cook more untill the water from the sugar has dried (the mixture will become thinner from the sugar) and the carrots have become soft. Take a hand mixer (like a potato masher) and lightly mash the contents. The texture should be a thin pudding, enough to coat the back of a spoon.

  2. The key to this recipe is to stir constantly to prevent the milk from burning on the bottom of the pan. This recipe should take 1.5 - 2 hours to complete.

  3. Let cool until it thickens to a pudding consistancy. Serve warm or chill and serve cold.
