Carrot and Red lentil soup, very filling. Serve with Naan bread.

Recipe Ingredients for Carrot and Red lentil soup

140 g red lentils
600 g carrots
1 litre stock (vegetable)
1 pinch cumin

Recipe Directions for Carrot and Red lentil soup

  1. Grate the carrots

  2. Clean the red lentils (unless they came out of a tin)

  3. Heat the cumin in a dry pan until you can smell the aroma being released

  4. Add the stock, carrots and red lentils and stir

  5. Bring to a gentle boil and then allow to simmer until the lentils are cooked.

  6. I blend it at this point, but that's a personal preference.

  7. Freezes well.
