Sweet carrot and raisin muffins, using vegan ingredients. Perfect for fall.

Recipe Ingredients for Carrot Raisin Vegan Muffins

2 c flour
4 tbsp corn starch
1 tbsp baking powder
2 tsp baking soda
1 tsp salt
1 c apple sauce
3/4 c splenda
1 tsp cinnamon
1 c soy milk
3 carrots
1 c raisins
2 c water

Recipe Directions for Carrot Raisin Vegan Muffins

  1. Preheat oven to 350 degrees.

  2. Place raisins and water in bowl and soak for 15 mins.

  3. Combine dry ingredients, add wet ingredients.

  4. Roughly chop carrots, place in food processor, process until chunky. Grater can also be used.

  5. Mix carrots into batter.

  6. Drain and add raisins. Stir well. Pour into muffin tin.

  7. Bake at 350 degrees for 20-30 minutes, or until toothpick inserted into middle of muffin comes out clean.

  8. Cool and enjoy!
