Light Carrot Raisin Salad with Pineapple Chunks

Recipe Ingredients for Carrot Raisin Salad

16 cup Ready Fixin's Shredded Carrots
2.66 cup (not packed) Raisins, Seedless
64 oz Pineapple Chunks in 100% Juice

Recipe Directions for Carrot Raisin Salad

  1. Drain the pineapple chunks and retain the juice.

  2. Place the shredded carrots, pineapple and raisins in a large bowl and mix together.

  3. Mix the mayonnaise and 1 1/2 cups of pineapple juice together in a separate bowl.

  4. Pour over the carrot mixture and stir well.

  5. Refrigerate until ready to serve.
