Carrot & Raisin salad with pineapple

Recipe Ingredients for Carrot & Raisin Salad

8 oz crushed pineapple
1/3 cup nonfat sour cream
1/3 cup lite mayonnaise (non fat)
6 cups grated carrots
1/2 cup raisins

Recipe Directions for Carrot & Raisin Salad

  1. Drain pineapple reserving 3 Tbsp of juice. In a large bowl, mix pineapple juice with sour cream and mayonnaise. Stir in the drained crushed pineapple, carrots and raisins. Cover and refrigerate serval hours. Serve cold.

  2. Serves 8
