Recipe Ingredients for Carrot Raisin Muffins

1/2 cup raisins
1 1/2 cups all purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 cup sugar
1/2 tsp salt
1 cup skim milk
1/4 cup unsweetened apple sauce
1 tsp vanilla extract
2 cups grated carrots

Recipe Directions for Carrot Raisin Muffins

  1. Preheat oven to 350.

  2. Spray muffin tins with non stick cooking spray

  3. In a large bowl combine dry ingredients.

  4. In a separate bowl wet ingredients.

  5. Add half the wet to the dry, stir until blended, then add the rest.

  6. Spoon into muffins cups and bake about 15-20 minutes or until a toothpick inserted in the middle comes out clean.
