Yummy carrot raisin muffins with whole wheat flour, pecans, applesauce and splenda. I love Mimi's Cafe's carrot raisin muffins but they are 607 calories. This recipe will be more figure friendly.

Recipe Ingredients for Carrot Raisin muffins

2 cups whole wheat flour
2 teaspoons cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ginger
2 teaspoons baking powder
1 teaspoon baking soda
1 cup applesauce
1/4 cup orange juice
1/2 cup crushed pineapple
1/2 cup splenda brown sugar
3 eggs
2 teaspoons vanilla extract
1 1/2 cups shredded carrots
1/2 cup raisins
1/2 cups pecan halves, toasted

Recipe Directions for Carrot Raisin muffins

  1. Preheat oven to 350 degrees.

  2. Combine flour, cinnamon, baking powder, salt and baking soda in a large mixing bowl.

  3. In another bowl, combine applesauce, pineapple,eggs, and vanilla with an electric mixer. Add shredded carrots and mix. Add raisins and pecans and mix well by hand.

  4. Pour flour mixture into the other ingredients and stir until combined. Pour into muffin pans with liners and sprayed with nonstick spray, about half full. Bake for 15 mins to 20 mins or until toothpick comes out clean.
