Recipe Ingredients for Carrot Raisin Cake

1/3 cup splenda blend for baking
1/2 cup raisins
1/2 cup unsweetened apple sauce
2 cups shredded carrot
1 egg
2 egg whites
1 tsp cinnamon
1/4 tsp ground ginger (dry spice)
1/2 tsp salt
1 tsp baking soda
1/2 cup whole wheat flour
1 1/2 cup quick-cooking oatmeal

Recipe Directions for Carrot Raisin Cake

Preheat oven to 350 degrees. Combine all wet ingredients together. Combine all dry ingredients together, then add dry mixture to wet mixture without over-mixing. Pour batter into greased 13x9-inch pan. Bake 1 to 1-1/2 hours or until middle of cake is cooked (toothpick test.) Let cool.
