Recipe Ingredients for Carrot Raisin Bran Muffins

1 1/2 cup bran cereal (such as All-Bran)
1 cup all-purpose flour
1/2 cup whole wheat flour
1/2 cup brown sugar
1 tbsp ground cinnamon
1 tsp baking powder
1 tsp baking soda
1/2 cup raisins
1 cup grated carrot
1/4 cup flaxseed
400 ml skim milk
2 tbsp white vinegar
1/4 cup margarine, melted
1 egg, lightly beaten

Recipe Directions for Carrot Raisin Bran Muffins

  1. For another buttermilk substitute, stir 1 2/3 cups (400 mL) milk with 2 tbsp (30 mL) lemon juice or white vinegar. Let stand for 10 minutes before using.

  2. Preheat oven to 400F (200C). Fill a 12- cup muffin pan with paper baking cups.

  3. Stir cereal with flour, sugar, cinnamon, baking powder, baking soda, salt, raisins, carrots and ground flaxseed in a large bowl.

  4. Whisk buttermilk with melted margarine, and egg in a separate bowl. Stir the liquid mixture into dry ingredients just until combined.

  5. Spoon equal amounts into the prepared muffin pan. Bake for 25 to 30 minutes or until muffins are firm to the touch and a toothpick inserted in the centre comes out clean.
