Recipe Ingredients for Carrot Quinoa Soup

2 cup, chopped Carrots
1 cup Cut Sweet Potatoes
4 tbsp chopped Onions
1 tbsp Vegetable Oil, Canola
5 cup (8 fl oz) Water
1 tsp Salt, Table
0.33 cup Quinoa

Recipe Directions for Carrot Quinoa Soup

  1. Slice onions and cook them in a pot over medium low heat until they are soft.

  2. Add the carrots.

  3. Add the water and salt.

  4. Cook until the carrots have softened slightly.

  5. Add the sweet potatoes and the quinoa. Simmer on medium low heat until everything is cooked through.

  6. For a creamier soup puree a portion of the mixture. I cut the carrots and sweet potatoes into medium pieces.

  7. I added fresh mint to it before serving and it was delish. Was thinking toasted sliced almonds would have been a good addition as well...fot people without allergies.
