Recipe Ingredients for Carrot Pumpkin Applesauce Muffins

1 cup carrot, shredded
15 oz pumpkin
1 1/2 cup whole wheat flour
1/2 cup white flour
1 cup splenda
3 egg whites
1/3 cup brown sugar
1/3 cup unsweetened applesauce
2 tbsp baking powder
1 tbsp baking soda
1 1/2 tsp pumpkin pie spice
1/2 tsp salt

Recipe Directions for Carrot Pumpkin Applesauce Muffins

  1. Preheat oven to 375

  2. Mix egg whites, applesauce, and sugar in a bowl. Add carrot. When well mixed, fold in pumpkin.

  3. Mix dry ingredients in another bowl.

  4. Combine wet and dry ingredients. Mix for a few minutes.

  5. Pour batter into greased muffin pan.

  6. Bake for about 25 minutes, or until they feel spongy when pressed lightly.
