Delicious power treat for breakfast or snacks

Recipe Ingredients for carrot power balls

2 cups almond meal
1 cup Old Fashioned Oats
4 tablespoons coconut oil
4 tablespoons honey
3 teaspoons baking powder
1 cup Carrots

Recipe Directions for carrot power balls

  1. Grind oatmeal in food processor until flour like

  2. Mix with almond meal

  3. Add the baking powder and mix well

  4. Melt coconut oil and mix into dry ingredients

  5. Mix in honey

  6. Cook carrots until very, very soft

  7. Mash (like potatoes) in food processor

  8. Mix with other ingredients

  9. Dough will be very soft and tacky

  10. Roll into balls, and roll balls in finely ground almonds or pecans then place on parchment covered cookie pan and bake at 350 degrees for 25 minutes

  11. Balls will be very soft - let them cool a bit them place them in refrigerator on sheets until completely cool. Store in container in fridge. Hard to resist these!!!
