Recipe Ingredients for Carrot and Potato Pancakes

1 large carrot, peeled
2 small red potatoes, peeled
5 egg whites
1/2 small yellow onion, minced
1 tbsp. all-purpose flour
1 tbsp. dry bread crumbs
1 pinch of salt
1 pinch of pepper

Recipe Directions for Carrot and Potato Pancakes

  1. Coarsely grate carrots and potatoes using large holes of a 4-sided grater. Put vegetables in a colander set in a large bowl.

  2. Press down on the vegetables, squeezing out as much liquid as possible. Discard liquid and return vegetables to bowl.

  3. Stir in everything into bowl.

  4. Heat a large, non-stick skillet over medium heat. Spray with vegetable spray.

  5. Drop heaping tablespoons of batter onto the skillet, using a spoon to flatten the pancakes slightly.

  6. Cook for 3 to 4 minutes, until the bottom is golden brown. Turn over and cook for about 3 minutes, or until golden brown.
