Easy to prepare, low fat salad using shredded carrots, crushed pineapple and raisins.

Recipe Ingredients for Carrot/Pineapple/Raisin salad

18 oz shredded carrots
12 oz canned crushed pineapple, drained
1/2 cup raisins
3/4 cup Hellman's reduced fat mayonnaise
1 Splenda, to taste
1 salt, to taste
1 pepper, to taste

Recipe Directions for Carrot/Pineapple/Raisin salad

  1. In a large bowl, mix together the carrots, pineapple, raisins and mayonnaise until well combined.

  2. Add Splenda (or favorite sugar substitute), salt and pepper to taste.

  3. Chill at least an hour before serving and stir first before serving.

  4. I like to serve this on a bed of shredded lettuce.
